Oh yes, they are good for parts.

Go hit Target (if there's one in your area) TODAY and see if you
can find any Star Wars sets on sale.  They seem to be selling off the
Y-wing and Tie set for about 40% off, and the Gungun Sub and
Sith Infiltrator (best of all -- it's a veritable flying gray
parts pack) for a staggering 80% off.  See if there are any left
in your area.

Even without those savings, they are great sets for pieces.  The
elements introduced in the Star Wars sets are, for the most part,
very well-thought-out useful additions to the LEGO universe, rather
than being big-ugly-pieces-that-should-have-been-of-other-pieces.
The ratcheted pieces which allow the wings of the x-wing (and
most of the other sets) to move up and down are genius.  The
wing pieces used in the x-wing and snowspeeder are wonderful
(not overly swept-back like the jetliner wings used in some
space sets like the Unitron spaceship).  The new rocket-engine
element is wonderful.  Etc.
